If anyone stumbles across this phenomenon....
I spent quite some time until I found that there's an option in the Ubuntu VPN Client settings "Use this connection only for resources on its networks" which stops adding the VPN tunnel gateway as the default gateway.
I found the OpenVPN and Split Tunneling working great on iOS while it didn't in Linux.
